High-fat diet ‘turns up the thermostat’ on atherosclerosis, finds study

In a recent study, researchers determined that derivatives of natural emulsifiers such as phospholipids found in high-fat, high-cholesterol diets can promote atherosclerosis via gut bacteria interactions with the immune system.
